SPINACH SALAD WITH PEACHES AND PECANS

Spinach Salad with Peaches and Pecans

Ingredients

Makes 4 servings

  • ¾ cup pecans, unsalted
  • 2 ripe peaches
  • 4 cups baby spinach, rinsed and dried
  • 2 tablespoons blue cheese salad dressing, reduced fat
 

Directions

  1. Preheat oven to 350 degrees F (can use toaster oven).
  2. Arrange pecans on a single layer on a baking sheet and roast in preheated oven for 7-10 minutes, until they just begin to darken. Remove from oven and set aside.
  3. Peel peaches (if desired) and slice into bite-sized segments.
  4. Combine peaches, spinach, and pecans in a large bowl. Toss with dressing until evenly coated, adding a little additional dressing, if necessary.

 

Note: Apples, pears, or strawberries can be substituted for the peaches, depending on which fruit is in season.
