Black Bean & Pumpkin Chili

Ingredients

Makes 6 servings

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 1 medium sweet yellow pepper, chopped
  • 3 garlic cloves, minced
  • 3 cups chicken broth, low sodium
  • 2 cans (about 15 ounces each) black beans, rinsed and drained
  • 2½ cups cubed cooked chicken
  • 1 can (about 15 ounces) solid-pack pumpkin
  • 1 can (about 15 ounces) diced tomatoes, unsalted, undrained
  • 2 teaspoons dried parsley flakes
  • 2 teaspoons chili powder
  • 1½ teaspoons dried oregano
  • 1½ teaspoons ground cumin
 

Directions

  1. In a large skillet, sauté the onion, yellow pepper, and garlic in oil until tender. 
  2. Transfer to a 5-quart slow cooker; stir in chicken, pumpkin, parsley, chili powder, oregano, cumin, and salt.
  3. Cover and cook on low for 4-5 hours or until heated through.
